Meet our Chief Winemaker, Tim Heath
Tim grew up in Adelaide, spending time on farms and developing a love for the land. Initially drawn to chemistry and cooking, he found winemaking the perfect balance of art and science. He studied winemaking at the University of Adelaide, graduating in 2000. Tim started his career at Mountadam and then spent 14 incredible years as winemaker for Cloudy Bay, traveling extensively in Europe and learning from iconic Bordeaux wineries like Margaux and Lafite.
Tim draws inspiration from winemaking regions, particularly Burgundy and the Upper Loire, valuing their deep connection to the land. He believes great winemakers are craftsmen who observe, adapt, and balance art, science, and tradition. Tim views winemaking as caretaking—respecting heritage and refining without drastic changes. “Every season is different,” he says, “and keeps me on my toes.”
